Short Description

This Fresh Summery Rice Salad with Chicken and Zucchini Was for the Coronation of the British Queen in England Created. The Salad Gets Through Banana, Mango and Raisins a Fruity Note Gets. Mint and Curry Make for An Exotic Flavor.



Ingredients

1 chicken, approx; 1.7 kg except; 1 onion, cut into thin slices; 1 large carrot, coarsely chopped; 1 rod celery, chopped; 6 black peppercorns, coarse crushed; 1 bay leaf; 1 large banana; 2 courgettes, with the peeler in thin slices of; Fresh mint, to garnish; 375 g basmati rice, well rinsed; 45 g raisins; 45 g dried mango, chopped; 75 g pecans; 150 g low fat natural yogurt; 4 Tbsp mayonnaise; 2 el korma curry paste; Grated rind of 1 large lemon; 1 Tbsp lemon juice, more to taste; 2 Tbsp fresh chopped chives,; 2 Tbsp fresh mint, chopped; 2 Tbsp fresh parsley, chopped; Salt; Pepper

Cooking procedure

chicken and a large saucepan with water Cover.. Onion, carrot and celery add and bring to a boil.. If necessary foam from the surface spoons.. As soon as the water begins to throw bubbles, the temperature down.. Peppercorns and add the bay leaf and 45 minutes gently simmer until grooving in the Chicken thigh a clear liquid escapes.. Chicken from the pan and set aside to cool.. Liquid through a sieve into a measuring cup and pour the vegetables and discard.. For the rice salad rice in a pot with 600 ml chicken stock.. Stir in raisins and mango and bring to the boil.. Reduce temperature and covered 8-10 minutes or according to package instructions to simmer until the water is absorbed and the rice is soft.. Rice covered remove from the heat and allow to rest for 5 minutes.. In a bowl and let it cool down.. During which the dressing to prepare: yogurt, mayonnaise, curry paste, lemon juice and lemon peel in a large bowl and mix well.. Chives, mint and parsley and season to taste with salt and pepper.. If the chicken very cool skin and remove the meat cut into bite-size pieces.. With the Curry dressing mix.. (If you want to eat salad only later, you can see the cover and curry chicken in the fridge.. 15 minutes before serving.) banana cut into slices and carefully fold in.. Pecans mix with the rice and zucchini strips.. Chicken mixture, garnish with fresh mint and serve.
