Parsley

The two popular types of parsley are the curly parsley which has bright green curly leaves; and the italian flat-leaf parsley which has a darker shade of green with smooth flat leaves. The latter has a more fragrant and less bitter taste compared to the curly variety.
Parsley provides natureas best carotenoids and is a nutrition powerhouse of a few known anti-cancer and anti-inflammatory phytonutrients and flavonoids (lutein, zeaxanthin, apiole, rutin and apigenin).
A strong decoction of them is good against jaundice. It operates powerfully by urine, and it expels wind. It gently opens the body, and removes obstructions of the liver and spleen. Galen recommended it in falling sickness, and in obstructed menstruation.
Parsley is a herb. The leaf, seed, and root are used to make medicine. Be careful not to confuse parsley with fool's parsley and parsley piert.
Parsley is used for urinary tract infections (utis), kidney stones (nephrolithiasis), gastrointestinal (gi) disorders, constipation, jaundice, intestinal gas (flatulence), indigestion, colic, diabetes, cough, asthma, fluid retention (edema), osteoarthritis, atired blooda (anemia), high blood pressure, prostate conditions, and spleen conditions. It is also used to start menstrual flow, to cause an abortion, as an aphrodisiac, and as a breath freshener.
The seeds are also powerful. The distilled water of parsley is a good medicine to give children troubled with wind in the stomach or bowels. The leaves of parsley mixed with meal and applied to inflamed eyes greatly relieves them, and fried with butter and applied to hard breasts, greatly relieves and mollifies them.
Tragus gives the following medicine for jaundice, falling sickaness, dropsy, and stone in the kidneys; seed of parsley, fennel annise, and carraways, of each an ounce; roots of parsley, burnet, saxifrage and carraways, of each an ounce and a half; bruise the seeds, wash the roots and cut small; all night steep in a bottle of white wine, and in the morning boil in a close earthen vessel, until a third part be wasted; which being strained, take four ounces morning and evening, abstaining from drink after it for three hours.

Parsley is one of less calorific herb. 100 g of fresh leaves carry only 36 calories. Parsley contains health benefiting essential volatile oils that include myristicin, limonene, eugenol, and alpha-thujene.
The essential oil, eugenol, present in this herb has been in therapeutic application in dentistry as a local anesthetic and anti-septic agent for teeth and gum diseases. Eugenol has also been found to reduce blood sugar levels in diabetics; however, further detailed studies required to establish its role.
Parsley is rich in poly-phenolic flavonoid antioxidants, including apiin, apigenin, crisoeriol, and luteolin; and has been rated as one of the plant sources with quality antioxidant activities. Total orac value, which measures the anti-oxidant strength of 100 g of fresh, raw parsley, is 1301 amol te (trolex equivalents).
The herb is a good source of minerals like potassium, calcium, manganese, iron, and magnesium. 100 g fresh herb provides 554 mg or 12% of daily-required levels of potassium. Potassium is the chief component of cell and body fluids that helps control heart rate and blood pressure by countering the effects of sodium. Iron is essential for the production of heme, which is an important oxygen-carrying component inside the red blood cells. Manganese is used by the body as a co-factor for the antioxidant enzyme, superoxide dismutase.
Additionally, the herb is also rich in many antioxidant vitamins, including vitamin-a, beta-carotene, vitamin-c, vitamin-e, zea-xanthin, lutein, and cryptoxanthin. The herb is an excellent source of vitamin-k and folates. Zea-xanthin helps prevent age-related macular degeneration (armd) in the retina of the eye in the old age population through its anti-oxidant and ultra-violet light filtering functions.
Fresh herb leaves are also rich in many essential vitamins such as pantothenic acid (vitamin b-5), riboflavin (vitamin b-2), niacin (vitamin b-3), pyridoxine (vitamin b-6) and thiamin (vitamin b-1). Diabetes prevention
Myricetin has also been evaluated for its effectiveness in the treatment and prevention of diabetes.

According to preliminary studies conducted at the king saud university by al-howiriny et al., parsley displayed anti-inflammatory and anti-hepatotoxicity properties.
