Short Description

The wok can also be used in conjunction with a barbecue fire to make delectable broiled steaks with a smoky flavor. Prepare a charcoal or wood-chip fire and allow it to burn down to glowing coals. Set a rack over the fire and place the steaks on top to sear quickly on both sides. Dampen branches of fresh rosemary (or use handfuls of well-soaked hickory chips) and place on the fire. Cover with an upturned wok and allow the steaks to smoke until cooked to taste
