Cooking Procedure
1 To make the Choux pastry, put the water and butter into a saucepan and bring just to boiling point
2 Remove the pan From the heat, add all the Flour and salt, and beat with a wooden spoon until the mixture is smooth and leaves the sides of the pan then Cool slightly
3 Gradually add the eggs, beating thoroughly until the mixture is shiny and smooth
4 Spoon or pipe the Choux pastry around the edge of a lightly oiled Circular dish, leaving the Center Free
5 Bake in an oven preheated to 425 F For 30-40 minutes, or until the pastry is Crisp and golden
6 Meanwhile, prepare the Filling; melt half the butter in a skillet and quickly saute the Chicken livers on all sides until sealed
7 Remove From the pan
8 Reduce the heat, add the remaining butter and Cook the onion until transparent
9 Add the mushrooms and turn in the pan juices until they are Coated but still Firm
10 Sprinkle with the Flour, stir well and Cook For I minute more
11 Gradually add the stock, stirring Constantly until the sauce is smooth
12 Fold the reserved livers into the sauce with the wine, ham, tomatoes and olives
13 Simmer For 2-3 minutes and season with salt and black pepper to taste
14 Spoon the liver mixture into the Center of the pastry, sprinkle over the Crumbs and parsley, and serve
