Short Description

CLASSIC FRENCH COUNTRY DESSERT, clafoutis is as simple as a batter cake with fruit-which, in fact, is what it is. The recipe is adapted from a clafoutis served for dessert years ago (and probably still served to this day) at Domaine Tempier, the great Bandol wine estate where Lulu Peyraud, now in her late eighties, continues to preside. In early summer the clafoutis was made with cherries but it could be adapted to many seasonal fruits-peaches, plums, berries, even apples or pears in the autumn. Whatever you choose, you will need about a pound of fruit, and of course the fruit should be pitted and/or peeled where necessary. Because berries are very juicy, you should double the amount of flour when using them.
