Short Description

ERVE THIS DELECTABLE COMBINATION of fresh ocean flavors with a plain rice pilaf cooked in fish stock, if you have it, with a pinch of cinnamon. When buying squid or scallops, be sure to request those that have not been treated with sodium tripolyphosphate (STP), said to be a benign treatment to maintain freshness and quality. It's hard to tell with scallops but squid that has been treated is a pure, bleached, dead-looking white. Either squid or scallops treated with STP will leach out a good deal of nasty-looking liquid when sauteed-and the fish never, in fact, browns properly but rather sits in the pan, stewing in its juices. Scrupulous fishmongers sell untreated scallops as "dry" scallops, meaning they are natural, without STP. Ouzo is the universal Greek aperitif, anise-flavored and slightly sweet, like French Pernod. It should be available in well-stocked liquor stores but Pernod may be substituted.
