Short Description

One of my brothers in law, "Useless Kalone", stopped by yesterday and, instead of paying me the money he owes me he gave me 5lbs of fresh cow's liver. I think he thinks we're even now; which will make this some of the most expensive cow's liver on the planet. He isn't called "Useless Kalone" for nothin. I love fresh cow's liver. This lot is about as far from calf's liver as it gets but it looks healthy and, if fixed right, should be delicious. I got this recipe from my dad's dad, Jimmy. Jimmy was a 100% Italian who got off the boat at Ellis island at the tender age of 15; and with his older brother of 17, made his way in the new world. Being European, Jimmy had his own ideas about how liver should be cooked; and this recipe reflects that.
