Short Description

In Western cooking sweeteners are used primarily in desserts, but in Asia, they are used as a foil for spicy foods and in the Middle East to round out meaty stews. The most common sweetener in the West is sugar, plus by-products such as molasses and golden syrup. Other sources of sweetness include fruits and vegetables, honeys, and tree extracts (e.g. palm sugar and maple syrup). In addition, there are many spices with sweet traits, such as cloves, cinnamon, and saffron, and sweet herbs such as basil. Saffron gives a sweet, subtle flavor and beautiful color to fresh peaches. They can be served hot or cold. If the latter, let them cool in the syrup, then remove and peel. Simmer the syrup until reduced to a glaze. Serve the peaches and some syrup with whipped cream, creme fraiche, or basil cream (see below).
