Short Description

Hollandaise is ridiculously fattening, I know. Every now and then, I'll order it off a menu, but at home, when the craving hits, I'll make my version for Tom and me. The sauce is a simple emulsion of butter with white wine and lemon juice-no egg yolks. The thing is, you don't need a lot of any sauce if you cook the eggs perfectly, meaning nice and runny. That way, the yolks moisten the crispy English muffins perfectly. This recipe SERVES 1 serving with two English muffin halves, but, like a martini, one is really enough!
