Short Description

My father was an extraordinary and enthusiastic cook, making us everything from Japanese tempura to crepes suzette to German sauerbraten. He would constantly emerge from the kitchen on weekends with a spoon filled with one of his experiments, asking for our tasting opinion. This salad was something he created when I was quite young, which I have adopted. He used to call it a bouquet of broccoli. He would be happy to know that his salad would fit perfectly into the style of cooking I was learning years later in the South of France. Buy as large a broccoli as you can find, then when you get home look for a bowl into which the whole broccoli head will fit snugly.
