MAKES VARIOUS AMOUNTS (SEE RECIPES) One year we judged the pickle competition at our county fair, and one of the Grand Prize entries that truly stood out was pickled peaches-sweet, tangy, and totally unexpected. We love when people get a little creative, so we thought we'd do a little Pickling 101. There are two basic ways of putting up pickles: One way is to make them in small batches and keep them in the fridge; the other involves canning in a water bath, which allows you to keep whatever you've just pickled at room temperature for at least a year. Either of these methods works for garlic, shallots, pearl onions, carrots, cauliflower, and a host of other vegetables and fruits. See what you come up with.
