KORDALIA CAN BE MADE with either firm-textured country bread or a baked potato or, as in this recipe, both. This sauce often accompanies salt cod for the Friday meal in Greece, but it's also traditional to serve it with little boiled beets-the beets will color the sauce pink where it touches them. In Macedonia, according to Greek cooking authority Diane Kochilas, the bread might be replaced with a cup of finely chopped walnuts.
