Short Description

This is a very traditional Lebanese dish. The two ways to cut the eggplant are slices and wedges. I like to use the wedges in this recipe. When Eggplants are in season, fry up a lot of eggplant at one time. Freeze the slices or wedges on a tray and package them once frozen. All winter you can make this recipe without smoking up your kitchen. Place slightly thawed pieces in a dish, cover with hot sauce and bake as usual. Traditionally, the Eggplant for this recipe is fried. However, I have made this dish many times by grilling the pieces instead of frying.
