Couscous is a staple of North African cuisine and is frequently eaten with tagines and other stewed foods. It is also used to make a number of sweets and can be mixed with vegetables and other ingredients to make salads. The couscous used in North Africa is not par-cooked, as are many U.S. varieties (often found in boxes) that yield a very different textured product. This recipe is written for raw couscous. Yield: 3.5 pounds cooked couscous, or 10 portions (5-6 ounces/portion) Cooking Technique: Steaming
