This is not authentic porchetta. The real deal is a boned young pig stuffed with its own seasoned liver, heart and kidneys and roasted on a wood fire. This is a very popular dish in Italy. But it takes hours and I have no need for a whole roast pig. So I go the easy route. Make sure to save some for panini the next day.
