Short Description

One specialty of the French Riviera is small fried turnovers called barba jouan (Uncle Johns), which are offered with a glass of wine or served as a snack. In the winter they are stuffed with pumpkin, rice, and grated Parmesan; in summer, Swiss chard, leeks, rice, brousse (ricotta), and Parmesan. Sometimes there are bits of cooked ground meat or ham in them. My Uncle Johns are baked in store-bought puff pastry and stuffed with a mild butternut squash filling. ( Tip: You can often find raw butternut squash precut and packaged.) Serve them with a small bowl of crispy, salted fried sage leaves on the side, a perfect pairing to the butternut filling. If you would like to fry the barba jouan instead, as is traditional, make them with egg pasta dough, stuff them as you would ravioli, then gently drop into 360-degree F. vegetable oil for 3 to 4 minutes, until golden.
