Caldo gallego translates literally
as "soup from Galicia,"
which is the birthplace of this
popular Spanish soup that blends
beans and greens with different
types of sausage. Jose Garces, who
opened Amada in 2005 and was
awarded the James Beard Award for
Outstanding Chef in the
Mid-Atlantic Region in 2009,
developed this version.
