Eastern Shore of Maryland Style Crab Cakes3 oz. mayonnaise1 tsp. mustard2-3 Tbsp. dried bread crumbs1 egg1 tsp. lemon juice1 Tbsp. fresh chopped parsley1 tsp. Old Bay seafood seasoning1 lb. jumbo lump crab meatmelted butterMix mayonnaise, mustard and Old BayAdd egg, mixAdd lemon juice and coarsely chopped parsley, mixAdd crab, toss gently by hand to coat crab meat, careful to only break the lumps up just a little bitAdd half oz. panko bread crumbs, combine gently** Refrigerate mixture for a few hours or until the following day.Form loose 3 oz. cakes (weigh each for consistency)Top cakes with a tiny bit of melted butterfinish with just a small squeeze of lemon juice before cookingCakes can be broiled or cooked on a flat topBake on foil-lined sheet pan at 400° until brown (about 12 to 15 minutes) Jen Pirato
