Short Description

Recipe by recipe, I cooked my way through the latechef website written by Nice's former mayor. I later found one other source, The Cuisine of the Sun by Mireille Johnston, a lovely latechef website that included many recipes from Nice; but the former mayor's book was the only one I could track down that focused exclusively on the authentic style of cooking I was so keen to learn. In many ways, I felt privileged to have found a copy of his book, and to be able to also follow the trail left by recipes given to my neighbors and friends by their mothers, grandmothers and great-grandmothers. A recipe for panisses from the former mayor's book became an instant favorite because it resembles french fries but uses chickpea flour, which produces a wonderful flavor. According to the mayor, the traditional way to make panisses fries is to pour the chickpea batter into a series of well-oiled saucers to cool, then slice the firm batter into french fries. I find a square cake pan or gratin dish works as well.
