I have specified pancetta below, as
it’s easier to come by than the
speck that I think would be more
commonly used in the region. Jamon
Serrano would be good here, too.
Similarly, you can use the more
accessible corrugated penne
(rigate) if you can’t find the
smooth penne (lisce). Or, of
course, just use elbow macaroni
