Short Description

HIS IS THE SIMPLEST of all tomato sauces-any simpler and it would be just crushed cooked tomatoes (which is not a bad idea). Make this with fresh tomatoes at the height of the late-summer season when they are full of flavor. Made in quantity, when tomatoes at the farmers' market or farmstand are abundant and cheap, the sauce freezes very well. I used to emulate my Tuscan country neighbors and put up jars and jars of tomato sauce for the winter, but lately I've been convinced that it's a whole lot easier to freeze the sauce in one-cup to one-quart containers so I have it available throughout the rest of the year. Pound for pound, between the two methods I suspect the carbon footprint is pretty equal. When fresh ripe tomatoes are no longer in season, and you don't have your own sauce, whether frozen or canned, on hand, you can make this with canned tomatoes-Muir Glen makes a very good organic product, and there are also imported canned tomatoes from Italy, although the best of these are wildly expensive and cheaper brands are not very reliable.
