Short Description

E ALL KNOW EGGPLANT PARMIGIANA but this is how a parmigiana is put together in wintertime, when no eggplants are available. Layered, baked dishes like this are so characteristic of the Italian South that they are truly symbolic of the cuisine. Note that parmigiana has nothing at all to do with the northern city of Parma nor with the glorious parmigiano reggiano cheese of that region. In fact, though you may use parmigiano in this dish, it's much more typically done with a well-aged pecorino cheese from the South. Use a good-quality fresh mozzarella here, the kind that's sold in its brine, and not the rubbery tough stuff that's sold as mozzarella in many supermarkets, which bears no resemblance to the real thing.
