Short Description

Mole sauce, one of the stalwarts of the Mexican home kitchen, is a combination of russet and dark browndried chiles, almonds, pumpkin and sesame seeds, spices, stale tortilla pieces, aromatic vegetables, andsometimes even a hint of chocolate. Traditional mole sauce is complex and takes hours even when madein a blender (the original sauce was hand mashed in a stone metate), so it was reserved for holidays andcelebrations in a dish called mole poblano de guajolote, or Mexican wild turkey in mole chile sauce. Myfriend and Latin food specialist Jacquie Hiquera McMahan says that maybe one in a thousand cooks everattempts to make mole. With the advent of prepared commercial moles, combined with the slow cooker,this long process is cut to minutes, and I can have an almost completely authentic-tasting mole any time Iwant. While mole is usually served with turkey in Mexico, chicken, duck, and rabbit are also used; here Iuse boneless chicken thighs. Serve this over white rice
