Short Description

Filled dumplings highlight both the variation and continuity of the cuisines of the Russian Federation all at once. Many varieties and sizes of dumplings appear throughout the region, and each provides some information about the local cuisine and traditions while relying on a common principle and technique. Whether they are manti, vareniki, or another style, all dumplings typically are made with egg noodle dough and often highlight some of the region's other components in their fi llings. Variations of these stuffed dumplings were once a distinct component of the zakuski tables that Russian royalty and elite enjoyed during the eighteenth and nineteenth centuries, when Russian cuisine started to become more refi ned.
