Short Description

CATALAN SAUCE for fish and seafood, this is characteristic of a number of Spanish sauces in which almonds, bread, and garlic are fried and then pounded in a mortar or whirled in a blender. The process gives a pleasantly rough texture and a complex and rather nutty flavor. This is a variation of the sauce with grilled shrimp. Almonds, bread, and garlic fried in olive oil sounds Arab to me- did this come to Spain with the Moors? Try salsa romesco with grilled or steam-poached fish or stir a healthy dollop into a bowl of fish stew. Spaniards often refer to this sauce as muy piquante, very hot, but I don't think most Americans, accustomed to Mexican and Southeast Asian food, will find it so. If you want to make it hotter, add more chilies.
