Short Description

UMMUS BI TAHINI, mashed chickpeas with sesame paste, is quintessential to an eastern Mediterranean meze table. Served on its own, the hummus goes well with crackers, or toasted triangles of Arab pita bread, but it's also good as a dip for raw vegetables-scallions, carrot and celery sticks, strips of cucumber, to of sweet red peppers. This is good finger food with a glass of wine (or arak or ouzo) before dinner, but it could also be a substantial side dish to accompany a main-course soup or salad, especially if you add the variation with a lamb-and-onion topping at the end. Tahini, or sesame paste, is widely available in supermarkets and specialty food stores, as is sesame oil. Be sure to use dark roasted sesame oil rather than the lighter quality that is sold in many health food stores and lacks the flavor boost of the darker kind.
