Cultivated dandelion greens aren't just for salads. When they are sauteed in garlicinfused olive oil, their earthy, slightly bitter flavor shines, which counters the rich cow's milk cheese and Italian sausage in this unconventional pizza recipe. I use a locally made fontina cheese from Willamette Valley Cheese Company. Use whatever locally made cheese you like, but remember that one with a strong flavor will work best with the other assertive flavors in this recipe. Baking pizza on preheated baking tiles or a pizza stone makes the crust perfectly crisp. They can be found at most kitchenware stores. If you don't have one, you can bake the pies on heavy baking sheets, but the crust will be paler and have less crunch.
