Short Description

Rainbow trout is one of the good fish. By that I mean rainbow trout are farmed in an environmentally friendly manner. They are labeled a "Best Choice" by the Monterey Bay Aquarium's Seafood Watch program, which helps consumers make sound selections based on what is fished or farmed sustainably. I learned this Italian quick-smoking technique during my time at New York's Coco Pazzo, where it was used to prepare squab. Here, I apply it to make a good American fish even better. The play of sweet and savory-maple syrup and herbs -in the cooking of the trout is also present in the salsa verde, with the pairing of apples and horseradish. The trout is cooked whole, with the skin on. The fat in the skin helps keep the fish moist. Also, make sure you soak the herbs well (as you would wood chips) so that they smolder. This will protect the skin from charring, which can sometimes impart a bitter flavor. And go ahead and try different variations and ratios of the herbs.
