Lebanese-inspired recipe,
we’re coating summer
squash—alongside mild
eggplant and sweet peppers in
varying colors—with
za’atar, a classic Middle
Eastern blend. Then we’re
roasting the spiced vegetables and
using them as a filling for hearty
