Short Description

HEN ANTONIA TRICHOPOULOU talks about the Mediterranean diet, which she does often in her role as Director of the World Health Organization Collaborating Center for Nutrition Education in Athens, one example of good, healthy Mediterranean food that she often cites is Greek salad. This has evoked hoots of derision from Americans used to the kind of Greek salad we get all too often in mom-and-pop corner restaurants, the one that's made with wet iceberg lettuce, hard tomatoes, and canned California black olives, dressed with Wish-Bone Italian Low-Cal Dressing. The salad Antonia makes when she entertains friends and colleagues at her summer house along the sea outside Athens is altogether different. In Greece the salad is called horiatiki, meaning "country style." If you don't care for anchovies, try flaking a little drained white-meat tuna over the top of the salad. This salad is robust enough to serve as a main course if accompanied by chunks of sturdy country-style bread.
