Short Description

WHY THIS RECIPE WORKS: Our inspiration for this dish came from a traditional Korean dish known as bibimbap, which comprises rice, a variety of vegetables, and a little meat, and is topped with a fried egg and served in a bowl. Our quick twist on this customary dish calls for prepared kimchi, a speedy alternative to chopping and cooking many separate vegetables. We found it best not to drain the kimchi before measuring it; the pickling liquid is quite flavorful and, when slightly warmed on top of the cooked rice, lends its robust flavor to the dish. Steak tips, also sold as flap meat, are sold as whole steaks, cubes, and strips; look for either a whole steak or strips that are easy to cut into small pieces for this recipe. To make the beef easier to slice, freeze it for 15 minutes. Kimchi comes in spicy and mild varieties, and can be found in the refrigerated section of Asian markets and in some well-stocked supermarkets. Handle the cooked rice very gently and do not stir it too much when adding the flavorings in step 1, or the rice will turn gluey. Serve with Sriracha or Asian chili-garlic sauce.
